As a former chef turned full-time traveler, I approach every trip with one big question:
“What’s the dish I can’t leave town without trying?”
It is not always the place with the longest line or the fanciest décor.
Often, it is the mom-and-pop diner tucked into a strip mall, the food truck that only operates on weekends, or the no-menu dive bar where the cook whips up magic behind the scenes.
